The problem you're talking about stems from a basic flaw in the blocking AI:
unnecessary double teams
Blockers are programmed to take on the first guy that comes across their path or comes into contact with them. That's not so bad in itself, until you realize that this logic still prevails in situations where that nearest defender is already being blocked.
This leads to situations where about 2-3 linemen per play are being "wasted" on unnecessary double teams, leaving defenders along the fringes of the box free to come in and make a play (usually untouched), because all the other blockers were already engaged.
The problem is even more apparent with 3-man defensive fronts, and other defenses like the nickel and dime that don't have a lot of defenders in the box at the start of the snap.
You will frequently see defenders outside the box come in to make easy tackles because your linemen were too busily engaged in a dumb double team to go seek out and block a defender running free in the open field.
