I'll do my niners to start off.

Gold
Patrick Willis: Speed Burner (or Closing Speed), Strength, Wrap Tackle

Frank Gore: Cutback Ability, branching tackles, workhorse
or Crabtree: Soft hands, Branching Tackles, quick feet

Silver
Justin Smith: Stamina, Durability(or leadership)
Vernon Davis: Strength, Speed burner
Crabtree: Soft hands, branching tackles
or Frank Gore: Branching Tackles, Cutback ability

Bronze
Parys Haralson: pass rush
Nate Clements: Bump Master
Manny Lawson: Speed Burner
Chilo Rachal: Bulldozer
Joe Staley: Stonewall
Isaac Bruce: Route God

2kfootballstrategy.com has a forum dedicated to replicating NFL teams, so you could check there, but I'll go ahead and do my Dallas Cowboys.

I was debating with Ward and Holmes who will play better this year. Holmes is very athletic, especially after the catch so I gave him good running abilities.

G: TE Kellen Winslow (Soft hands, Tough in the Middle, Possession receiver)
G: CB Ronde Barbery (Coverage Bonus, Leadership, Run Reader
S: WR Antonio Bryant (Acrobatic Catches, Soft Hands? Possession receiver?)
S: MLB Barrett Ruud (Run Reader, Strength Bonus)
S: C Jeff Faine (Bull Dozer, Strength)
B: QB Byron Leftwitch (Pocket Presence)/QB Josh Freeman (Rocket Arm)
B: HB Earnest Graham (Workhoarse)
B: FS Tanard Jackson (Footsteps)
B: DE Gaines Adams (Pass Rush Bonus)
B: SS/OLB Jermaine Phillips (Quick Feet)
B: Derrick Ward - Not sure, didn't see him play much

You could also get more Olineman in their, since that is a strength of the overall team
