The best way I've been able to tell Golds is the number of stats that are 90+, but it varies by position. For example:

Halfbacks
Bronze: No 90+ stats
Silver: One 90+ stat
Gold: Two or three 90+ stats

However, Gold Quarterbacks tend to only have 90+ in one stat (Focus) and Gold Offensive Linemen only have 2 (Focus, Strength).
