Well I can't remember what all of the abbreviations are off the top of my head.

To help you out with the two examples you've given, ACC is Acceleration, how fast the guy gets to his top speed.

CTH is his catch rating, how likely he is to catch a pass thrown his way.

                What they mean in gameplay....

Speed (SPD)- How fast the player can run. The higher this rating, the faster the 40 time.

Srength (STR)- How strong your player is. The higher this rating, the easier he will be able to break tackles, or push people around.

Awareness (AWR)- The player's ability to recognize and react to a play. The higher the awareness rating, the more likely the player will "read" a play correctly.

Agility (AGI)- How agile or nimble a player is. His ability to slip through the cracks and make nice cut-backs.

Catching (CTH)- How well the player can catch. The higher this rating, the less chance of dropped balls.

Carrying (CAR)- How well the player can hold onto the football. The higher this rating, the less chance of a fumble.

Jumping (JMP)- How high the player can jump. The higher this is, the higher the player's vertical leap would be in real life.

Breaking Tackles (BTK)- How good the player is at shedding defenders. The higher this rating is, the better ability the player has to run over or stiff arm a defender or avoid a tackle after being touched.

Tackling (TAK)- How well the player can tackle. The higher this rating, the better chance that the player will be able to tackle the opponent.

Throwing Power (THP)- How far the player can throw the ball.

Throwing Accuracy (THA)- How accurate the QBs passes are.

Pass Blocking (PBK)- How well the linemen is at protecting the QB while the QB is looking to pass. The higher this rating, the less chance that you will be sacked.

Run Blocking (RBK)- How well the offensive linemen can open up holes for the running back. The higher this rating, the bigger the holes will be.

Kicking Power (KPW)- How far the kicker can kick a field goal from, or how far he can punt. The higher the rating, the further the player can kick or punt.

Kicking Accuracy (KAC)- The higher this rating, the larger the "yellow" part of the kicking meter will be. This allows the kicker's kick to have a better chance of making it or a punt to do exactly what you intended it to.

Stamina (STA)- How much energy the player has. The higher this rating, the more the player can play before he is fatiqued.

Injury (INJ)- How likely the player is to get injured. The higher this rating, the less likely the player is to get hurt.

                      Forgot to explain acceleration.

Acceleration (ACC)- How fast the player can get up to full speed. The higher this rating, the better chance you have at hitting an open hole at full speed.
