It's really up to you man. If you feed your guys the lower guys to help with stats I don't see a problem with that as the low guys are cheap to buy anyone. I usually pick a few teams that I will try and complete a collection with and don't sell those players no matter what. Then keep the better OVR guys to either sell or put on my squad
