Hold L trigger and move thumbstick on Xbox, I'm sure it's L1 and thumbstick.

I believe its holding the L2 button and pushing up on the right analog. Each direction on the right analog has its own taunt I believe.

^ Thats right. Unfortunately you can't customize this like in NFL Street 2. That'd cool but might also be over the top. I dunno, just adding my $0.02.
