In 2007 for the 360, I have yet to have the CPU shoose to kickoff. I wish it did just to keep it interesting....

I think they should have coach profiles. For example (Cardot I'm sure you know this) Kirk Ferentz heavily favors receiving at the start of a game. Wouldn't it be cool if EA replicated the real-life coaches decision?
