Will 08 have Online Challanges (Instant Replay on bad calls)?

Fumbles are a completely different thing. They're not random at all. There's a complex formula regarding the situation, carry rating, and probably some other crap. Same with dropped passes.

This is more akin to you sitting out your starting QB because he got caught drinking.

Honestly if they do have them hopefully there is an option to turn them on and off. Then no one has to worry.

LOL, you have a good point. I still prefer to have it but I can see why some people wouldn't. It was a very popular feature in ESPN 2K5 so it may not be as bad as you imagine. But then again 2k did a great job with their challenges, hopefully EA will do it justice.

Ideally, developers will get the hint and make features optional.

Personally, I hate challenges in video games. I hate the concept. I mean, does any other genre intentionally mess up a game's engine? No. But if you like them, that's fine. I don't see why we can turn off injuries, fatigue, and make every player a 99 OVR, but I can't turn off a damn challenge?
