Use the A button to put the ball in the OUTSIDE hand away from defenders. If defenders are on both sides of you use the RB button to cover up. Its not glamorous but your fumbles will go down I promise.

yep, and probably why i've never had a problem with fumbles myself.

Yeah, I've been doing that from the beginning too. Even in the open field I'll switch to get the ball in the arm closest to the sideline; just looks and feels more realistic. The animation isn't too hot, though.
