There's some plays on defense, like Cover 1 Press, etc. What are these and how do they differ from a normal Cover 1?

your DBs press up towards the line. So the safeties will be in a similar spot as the linebackers and the CBs will be on the line and should jam the WRs when the ball is snapped.
