You should be able to pick an existing schools jerseys and then modify them......for example, I was going to use Oregon's green jersey but I didn't want to have Ducks on the front of the jersey

I think the ability to upload fonts to teambuilder would be awesome, it make all the unis different. And you could have your team or school name written out in your preferred so it wouldn't be a logo. A great site to check out free fonts www.dafont.com whoops..already getting ahead of myself.
