When you are in the playnow mode just cycle past the W teams and then you will see your created teams.

First off, there is a whole teambuilder forum and there is a thread that documents this.

Secondly, have you actually downloaded the team onto your xbox 360?

Ok so you saved it in one of your slots? If you have go to Play Now and select Exhibition. Scroll all the way to the very end of the school list where Air Force and Wyoming meet. The TB teams should be in between them.
