Im seeing clips of the retro uniforms, but I don't know how to access them in the game. Any help would be greatly appreciated.

You can press triangle on the team select team to access the uniform options. What you see there is what you get.

If you're seeing some that you don't see in-game, then those are TeamBuilder teams that other people have created with custom uniforms.

My question is this: can your online opponents see on their screen the uniform colors you picked? Last night my opponent said that my team was wearing default home unis when I had chosen an all solid color scheme which I could see on my screen. And this was not a teambuilder team, I was Wake Forest.
