Try using Protect Ball (RB for 360, R1 for PS3, I guess?), its been working for me and maybe try playing conservative for the "Big Run" prevents you from fumbling. Its been working for me, idk just trying to help.

so far the fumbles to me are realistic... i have had some Oh S moments... brings a level of excitement to every snap

If you start having fumbles a lot or penalties just tone down your gameplan. I'll mix it up throughout a game but I always get a facemask penalty or fumble at a key moment. I'm Wash State in my offline dynasty so I can't be having those mistakes against teams in the Pac-10.
