I would look for speed and power running backs, and option QBs of course

For quarterbacks go on the search function and select quarter back and search the prospects. once you get the result sort them by 40 times and look at the fastest ones. You will probably not be passing a lot with GT so you want a runner.

Next you will want a power back and 2 speed backs.

TE's should be blocking and you want big physical recievers who can block. (probably balanced ones since a lot of play action routes are deep posts.)

This. And dont forget about O-linemen, go after the run blockers.

4.5 speed, bigger B-Back (FB) .
Speed A Back (HB)
Also the second A Back, should be quick, but you can go a little bigger and better blocker for your primary A-Back.

QB - Quick
Oline - In the game, I guess recruit Run Blocker (IN Real life, it's a different animal - completely different than game blocking in an option offense)

WR - If you can get SPeed/BIG that's excellent . Otherwise I'd have a speed, and a little bigger/better blocking receiver

Offsetting the WR and RB, just allows for a better chance of getting a better block for your feature ABack running to their side.
