I've always noticed this 'predetermined outcome' thing in any EA game ever made.
Like the OP said, it seems like in some games that no matter what you do, it will win the game and there is nothing you can do to stop it. Like there's some cheat code in the system.
However, I've also come to the realization that there is such thing as having a bad game. Ever notice this in real life? Happens a lot. Teams sometimes turn the ball over more than they should or receivers aren't catching balls they should and the defense is giving up big plays left and right.
It's all relative. You can't expect to be perfect every game. Receivers, no matter how good, will drop balls. QB's will throw INTs. Halfbacks will fumble the ball. Defenders miss tackles. The point is, it happens.
