Tulane has the Superdome so that's clearly the biggest of the 1 star teams, plus they are in New Orleans so they'd definitely get the SEC invite if you turn them around.

UAB has a 70000 seat stadium and with Troy, Auburn and Bama in state they are hard to build up.

This, only reason I picked them and not any of the other 1*'s was the stadium and uniforms are pretty sweet. Talent wise, they have a lot of it for a 1*.
