Well, it's a weird thing. You would think a team like Michigan would be great with Denard, Nebraska has some mobile QB's solid RB's and a great defense. Ohio State, Oregon, and several others fit the fast QB option profile.
Something about GT though that just seems to make a difference at least in online play. With so many ratings this year my guess would be it's the the way the offensive lines block ratings are. Not just run blocking, but secondary ratings. It stinks because GT can be made one dimensional with so little at WR and QB, but I can still pick up the occasional 3rd and long with hot routes out of a hail mary set (GT doesn't have shotgun). So I would still recommend GT, they just seem to have the "it" factor. If you want a lower tier team maybe Navy or Army, they might also have the "it" factor being natural option teams.
This offense can be so rewarding I'm surprised more don't try it. Like I said earlier it's all about feeling comfortable with 3 yard gains. If you play online and you start getting 3 per play over and over it's really gotta take a toll on the other human player, especially as he's sending so many rushers. Some might not like this but I have no problem throwing the clock on conservative and eating up a 7:50 minute drive. Once you establish that you will run and run and run some more then start throwing, but hot read some of our guys to block because he's going to send a lot of pressure. You will feel when a pass is due, so much of this offense is about feel. If your executing it can appear unstoppable and completely demoralizing. At the same time you will run into some people who are very good at shutting it down. At that point you just do your best with what you have.
My motto is defense, no turnovers, ball control. That's all I think about. Just like in real life if you eliminate turnovers most the time you win. Just watch that option, only pitch if you have a clear angle, never out of desperation!
