FOUND IT!! Thanks for all of the help -- it's working like a charm (especially running the slip screen to the non-blitzing side)! I've got 1 on 1 coverage on the WR on the blitzing side and running a slant is money in the bank! And running the slot WR on a slant on the non-blitzing side is working as well . . .thanks again . . .

The best way to handle it is the same with any blitz.

If passing slide protect into the blitz. If he goes wide on all lineman then go agressive. Use a short passing play and hot route the receiver closest to the blitz on a fly or move them in motion and hike it when they are on the blitz side between the G and T. They suck blocking but they give you an extra second you need.

Or I like running a pitch to the blitz side and hot route the receivers on that side to do ins to add blockers. This especially works in your situation playing a human opponent as they're tackling usually sucks.

To effectively beat a press simply send one receiver in motion.
