Is it possible to control more than one team or coach in an offline dynasty? It appears I can only control one coach, unless I'm overlooking somewhere.

You definitely can control more than one team. I've done it every version in the past, but I haven't started my dynasty yet this year and I can't remember exactly how to do it.
