How many players can you create on a team and do they carry to dynasty? For instance if I create some missing freshman will they be in dynasty

It depends on if the roster is full or not. I don't think you'll be able to make all the missing freshman since the roster sizes are smaller on the game than in real life. And as long as you save the roster file before you go into dyn then you should be fine.
