Pardon my ignorance but I have no idea how to do this. Tired of facing cheesers that only throw to one guy - well I guess they aren't cheesing if I'm leaving him in single coverage regularly.

How is throwing to your best reciever cheese? God I hate that term. You said it yourself, he's exploiting a favorable match-up. That's football 101. Try spotlighting him or rotating coverage to his side if he's burning you all day.

Yeah - I know he is.

There's no way to double a guy though like in 2K football?

I tried the "man up" hot route but that is extremely ineffective.

Well, the only thing i know about doubling a receiver is taking a guy that isn't already covering a man and assigning him on the receiver i want to double.
