Oregon is the only team that I've seen use it (and I've never seen a game where they didn't use it) but it basically goes like this:
  1. For XP Oregon comes out in swinging gate formation
  2. If the D isn't aligned properly then they can run various plays from this formation to go for 2 points
  3. If the D is aligned properly then Oregon can shift back into a normal XP formation and kick the XP for 1 instead

Here's a good video that I just found on youtube about it:

I'd say there pretty much no chance that EA will add something that rare, especially for something so different. Just try to imagine how difficult it would be to have set up the defense for this and then the changing of both O and D when they switch back to a normal XP.
Not to mention it would just make the game even more cheesy. I can see that formation either being abused to hell and back, or completely ignored because of how ineffective it is. EA needs to get their gameplay right before they can consider something like that.

Oh, and Wisconsin used it in the Big Ten championship. I'm still trying to forget that game. Hard to believe that the safety that spent all game getting burned and picked on is in the combine...
