is it cheese to redshirt guys in their sophomore, junior, or senior years?

No, Ohio State did this with Etienne Sabino after his true sophomore season. He wasn't injured. It was simply to create distance from Brian Rolle and Ross Homan - giving Sabino two years to start.

No. Teams in both basketball and football do it in real life all the time.
