I'm pretty sure you're asking for a Falcons/Mike Nolan style defense, where most of your linebackers and sometimes the safeties are moving around in the box to disguise their assignment and confuse the quarterback. Every once and a while you'll even see the nickel corner in on it and the defensive ends standing up and sliding.
If that's what your asking for, I don't think it's really in the game, but it would be really awesome if someone could figure out how. I feel like repositioning the line, secondary, and linebackers (like you said) would be the most obvious way to do it, but it probably would only work against a human QB as the CPU should know who the reads are as soon as your players move.
