Coin Toss...

Why does your opponent seem to ALWAYS kick when they win the toss?

Because honestly that's how it is in real life. I would say 95% of people who win the toss elect to kick or defer at the start of real games. Only coach I can think of who bucks that trend consistently is Kirk Ferentz of Iowa

Ah! I don't think I've ever paid too much attn to it but honestly when I win it I'm looking to kick.

I've noticed that in big rivalry games, they have a higher likelihood of picking receive.

It's not much of a change, but after about 5 games of receiving, I played Michigan-Ohio State and Ohio State chose to receive to start the game.

Tested it with maybe 5 or 6 other games, and saw a few more occurences.

For me, I've noticed a difference depending upon the style of play of my opponent. For example, if I am playing a more aggressive team, I have noticed they will pick to receive to try and get on the board first (Miami, UF, etc.). However, the majority of teams hold to conventional wisdom which says to defer to the second half.
