Use R3 to control the defensive line moves. Holding it down while on a lineman will attempt to use a power move. Moving the stick left or right will try to use a finesse move.

Can you start the move before you make contact? or do you have to be engaged to start a move? I never play on the D Line...

You can only start the move itself once the ball is snapped. You can move pre-snap to try to jump the snap, but you risk an offsides or encroachment penalty.
