Should be a way to disable coaching trees in Dynasty mode but unfortunately there isn't.

I'm having a hard time comprehending why it's a user vs user game when it's a cpu team.

They play out some of the big CPU/CPU match ups manually for fun. That’s what I’m understanding anyway.
