In Dynasty it obviously uses the Coaches Poll to determine team rankings next to their name and how they appear in the Dynasty. How do I change that in the Editor to use the Media Poll or BCS Poll instead.

I am not sure you can change what poll the game uses. You'd probably be better off just making all the rankings the same.
