I want to go back to the factory set, so that I can build my own, but I can't find a reset option under Settings.

Try under Quick Settings and change there then save.

Go to Game Settings and change the Game Style to what you want (3/4 Competitive or 4/4 Full Sim, for example). Then, when you exit that menu, sliders should be back to default.
