I'm kind of a goalie gear freak, so I like all the gear in the game to be as accurate as possible. The problem is, after I edited all the goalies in the main menu, and then start a franchise, most of my changes won't save and colors are messed up (this was also the case in earlier NHL games). So with every new franchise I start, I have to do it all over again, and even in the mode itself it will not always save, so I have to do the changes twice

Does anyone have a solution for this issue, or is that just another "EA thing"?

Just one of the many bugs that exists every year because EA would rather focus on more crucial things, like creating mascots.

Best thing to do is edit the goalies for the team you are about to play for the first time in your season
