Eating a shot while transitioning, sometimes stips the transition but not always. Maybe EA dev could shed some light on that.

And he did. From the impressions thread.

If you are postured up and you land a strike it will cancel the transition attempt
by the guy on the bottom.

If you are postured up and the guy on the bottom blocks your strike, the guy on the bottom will have a window where he can attempt a transition without worrying about a strike interrupting the transition.

If the guy on top is not postured up, a strike should never cancel a transition.

The idea was to try and mimic the mechanics around the parry where a successful parry give you a counter window, here a successful block would give you freedom to pass.

Unfortunately we don't really sell it with animations so it just ends up looking like the guy gave up on the transition.

I'd really like to get some different transition cancel animations in there that sell the fact that the strike was the reason for the failure, something like a bigger hit reaction as he falls back into the position.

But as of right now we don't have those animations.

A postured punch should always stop a transition, (transition, not a get up) if the trasition was not made immediately following a blocked postured punch. Unpostured punches are unblockable, however you can transition straight through them, and they don't cause as much damage. So good Ground and pound set ups are to throw an unpostured punch or 2 to try to bait a transition attempt. Then try to time it before, and posture up and throw, to land stronger ground and pound, and keep them in the same position.

I understand left and right to block transition but what about blocking an opponent from getting up? like if he is hitting left stick down what do i counter with so he won't get up tried left and right both doesn't work

R2 and right stick down, and that one has the biggest denial window.

There's a thing I haven't noted until now:

I tried a rear naked choke and my opponent escaped directly into mount! This happened a lot of times after I saw it.

Is this normal? Is there a way to avoid this?

I haven't played in awhile and forgot how to defend sweeps/reversals. If I am top and a guy is trying to sweep/reverse me from the bottom, that is R2 plus R stick down right?
