I just found out you can change the background screens in Undisputed 3

You can change it to the octagon girls its in the settings

Not just the octagon girls, from what I remember you've got Jon Jones (different jon jones hitting poor dudes depending on where you are on the menu), GSP, Cain Velazquez, Anderson Silva and I think that's it? It was really cool, I would change it depending on who fights IRL next.. good times. till EA bought and ruined it like they do everything
