Some higher level fights are just gross to watch as an mma fan. Also every time I try watching I end up booting up ufc and playing that. Watching people play video games just doesn't do it for me.

Most likely because it can be incredibly cheesy IIRC. Same reason I can’t watch it (although I heard about your win with with Pearson, great job on that.) Like, it’s a super cool concept but the cheesy/spammy fights put me off.
