After a bit more time focusing on these moves, here's my thoughts:
UP then quarter circle LEFT or RIGHT (stutter spin)
UP then LEFT or RIGHT (stutter juke)
The stutter moves are probably the most useful. They are good for special teams returns because you'll often get a broken tackle, even if you don't see the full animation. They also work for runs between the tackles if you need to hesitate a bit.
DOWN then UP (stop and go)
DOWN then quarter circle LEFT or RIGHT (stop spin)
DOWN then LEFT or RIGHT (stop jab)
As noted, these are great for when going down the sideline. But in general they are good for running outside when a defender has the angle on you. edit: I should add... The defender needs to be going at or near full speed for these to work best.
RIGHT then RIGHT (or LEFT then LEFT) (jab juke)
RIGHT or LEFT then DOWN (jab stop)
These two jukes will work when you have some space, but charging up a normal button juke (hold X, then bottom shoulder button on PS2) is not only more effective but also easier to pull off. I've actually abandoned these in favor of the charged button juke.
RIGHT then LEFT (or LEFT then RIGHT) (double juke)
RIGHT or LEFT then quarter circle down and back (juke and spin same side)
RIGHT or LEFT then half circle down (juke and spin side to side)
These three are difficult to pull off because they are double moves and really require a specific situation. I've found that usually the first move will work but the second won't and you'll get tackled. It's probably best to try these when you have a lot of open space and only a few defenders. Though, I really don't think these moves are even worth trying unless you really want to showboat and try for a crazy highlight reel move... Which is the way it should be I suppose.
