You can practice TD celebrations in the CRIB...Madden doesnt have this.

It'd be pretty tight if you could freestyle with the Right Joy stick for your touchdown dances. OR, if your Owens and your playing the Cowboys you could take the ball and run to the center of the field (on the blue star) and point in the air. (Then you'll probably see George Teague come out of nowhere and blindside you.)

I remember on NFL 2K2 for Dreamcast Jamal Anderson would do that bird ting if he scored a touchdown.
