Yes you can edit the names and numbers of classic teams.

Can't you edit like the regular teams jersys however you want this year? Thought I heard that somewhere... but maybe not.

Oh, another question. Where would I be able to find like the entire depth charts of classic teams? Because I have no clue where to find them.
