I finally got a copy of ESPN NFL Football demo from PSM and started it but everytime I start a game it reverts to the offensive/defensive controls at the beginning of the game(dust or third-party controls not a factor)

I tried my copy of NFL 2K3 and it worked fine.

I had the same problem, boil some water and put your disc in the water label side up for 30 to 40 seconds, that will do the trick I gauranttee you.

just tried it with the Xbox version of the game and it didnt work.
