Not sure. I know I'm unlocking things with custom settings...just not those hidden players. I think you canstill unlock stuff by playing with pro, all-pro and legend settings in OTHER Modes...exhibition, fpf and season. If you really want to unlock everything then you do it like that and not have to worry doing it in Franchise mode.
