I don't see it anywhere, but a lot of times when a qb throws a TD, it will pop up and say that he has 77 career TD passes. How does it know if it doesn;t track career stats?

Go to your depth chart (either in game or not, it doesn't matter), and press Select on the player whom you wish to view. With that you can see yearly and career statistics.
