I pick all these new plays and can't get them to load in the game.

You have to load your custom playbook before loading the franchise. When your franchise is loaded, go Gameplan/Playbook Manager to check and make sure it's there. Then when starting a game, in the Controller Assign screen hit Y (Xbox) to change playbooks for either team.
