How can I switch which team he coaches? I want to make him coach the Redskins.

I don't think you can.

You can do it in the editor. Click the little headset on the top bar and change it to Shanahan. You can change his name yourself and pick his photo from the list. It is pretty widely agreed that changing the ratings will no nothing. You can change the play calling though and it will work in-game.
