Are there any roster sets that have updated player stats? Or is it not possible to do so?

Sadly not possible. Stats are stored within the game itself and not the roster (I think)

I'm pretty sure they aren't on the game disc. I believe they are in the file, but it is apparently a file-killer to change them. Even just blanking the rookie stats can seem to cause problems. On top of that, Finn didn't put in a way for us to change vet's stats.
