Since my XBOX is modded is there an easy way to just FTP into it and overwrite files to update the rosters? Also, am I able to somehow upload new photos for players too this way?

Saves - they have a folder. You just put them in there via FTP.
Photos - Not possible. They are encoded on the disc and even if you're playing an ISO, they're part of the ISO and not able to be affected by just copying files. Game files are compressed.
