One thing I found to very helpful for creating and modifying pitchers, is the Pitch Arsenal page. There, you will find the actual pitches each pitcher throws (minimum of 100 pitches thrown), the average speed, and horizontal/vertical movement.
I haven't worked out how the movement data translates to the movement sliders in the game, but the pitch types and speed should be obvious. The Pitcher Visualization Reports are pretty cool as well.
