Ex: Live can be in arcade mode and have all the fouls turned up just like in simulation mode. Why not just have the flashy dunks show up in arcade mode but not when in simulation mode? That wouldnt be difficult to do and seems like a pretty good solution to me.

That sounds like a good idea. But they're still probably going to market to the most people at one time and the general audiences reluctance to mess with settings sliders probably prevents this.
