When you are stationary and not dribbling, experiment with just holding and swinging the right stick in all sorts of combinations - you will see some really sick, fluid crossovers and jabsteps. My favorite was already mentioned above, holding the ball low between your legs with your back to the defender (holf left on right stick) and then spinning off and going the opposite way (press left stick right).
From a standing dribble, I just swing my right stick back and forth all day, and you kind of cradle the ball back and forth while hopping in place. I can't describe it but it's so cool. From this move (which you can do as long as you want) you just move the left stick whichever way you want to go and he'll do a really cool move. This doesn't work with bigmen though (as it shouldn't).
From a running dribble I love the new 'down' move. The player does a hesitation dribble/jabstep and if you keep holding it he will go forward (past the beaten man if he bit on it) or you can interrupt it halfway through and pull up for a shot.
I also use the right stick constantly on D. I am always holding it down when guarding a perimeter player and then throwing it up to contest shots. This seems to make the cpu shooters miss more often, though that could be in my head.
