I'm curious which mode will generally give me the most realistic stats? (at default)

All Madden or All Pro?

pretty much depends on your level of play....

for me, allpro or all madden either one
i run at 12 min with 12 sec run off accel clock
and i see pretty good numbers all around but, i also try to call it as a real coach would no crazy 4th n forevers blah blah all that....
