Why did they ever remove this?
They had it back in M25.
Tuck & Run
The Tuck & Run trait determines the frequency that the quarterback breaks the pocket in an attempt to use their feet to get yards. Some players look to hang in the pocket while others take off at the first sign of pressure. There are three levels for this trait:

Rarely – A quarterback with Rarely will hang in and take shots instead of scrambling.

Sometimes – Sometimes this player will scramble, sometimes he will extend the play.

Often – These quarterbacks will take off if he sees green in front of him.

This trait has no effect on a human controlled player.

Found some good info here.
Traits can change the cpu ai for sure.

Senses Pressure

Paranoid(will get rid of ball even when not under pressure, simply scared of taking sacks) - rookies

Trigger Happy(still a bit scared, but pressure will need to be closer before releasing the ball) - Tony Romo

Ideal(this porridge is just right) - Tom Brady, Peyton Manning

Average(holds on to the ball and doesn't immediately recognize pressure) - Jay Cutler

Oblivious(holds on to the ball until last second and takes more sacks than other guys because he refuses to let go of the ball) - Big Ben

Forces Passes

Conservative(QBs won't try passes to partially covered receivers. These guys would rather check down or throw short passes, and they will even check down when just sensing first signs of pressure.) - Sam Bradford, Alex Amith

Ideal(These guys know when to go down the field or just check down. This is the default passing behavior.) - Peyton Manning, Drew Brees, Tom Brady

Aggressive(These guys will try to force the ball into full-on coverage at times.) - Jay Cutler, M. Stafford, Kirk Cousins

Throws Ball Away
Yes/No - This is a simple flip of the switch. Some guys throw the ball away (Brady, Manning) and others avoid it (Rodgers, Cutler, Big Ben).

Throws Tight Spiral
Yes/No - Another flip of the switch. Non-QBs are set to "no" and so are average quarterbacks. Elite quarterbacks like Aaron Rodgers are set to "yes" for this trait.

I'm adjusting the CPU qb traits based on 3 criteria.
1. Ratings (Throw on run, Short throw, med, deep. Also awarness and athleticism).

2. Coaching (is the coach aggressive at calling plays, change the scheme to match it, if it's needed. Most schemes should be ok. However if you think the gameplan should change b/c a qb is out or his top targets are out, adjust the scheme to give the cpu the best chance to win)

3. Playbook/Scheme (If they run a West Coast PB, you may want the cpu qb to be more conservative ie. A. Smith, exception to qbs like A-Rod. For elite qbs like R. Wilson, Brees, Brady, Big Ben, P. Rivers and A. Rod, I would set them to aggressive, strong-arm, and vertical.)

I'm digging up some statistics on qbs air yds per gm.
Heres some interesting info from a few years ago.
What's surprising is how qbs like Brady and Manning and how they go with 0-10 yd passes so often.

I set the Packers to
In Schemes- Offensive PB- WC
OFF: WC
Qb- Balanced(A. Rodgers)

A. Rods qb traits(default)
Qb style: balanced
Sense pressure: ideal
Force passes: ideal
Tight Spiral: Yes
Clutch: Yes
Predictablity: Yes

Anyway I basically just matched the Playbook to suit the qb and scheme and these are the results

He was running the West Coast offense to perfection. Norman had a crazy one handed int but other than that Rodgers was flawless!
