Should be a simple answer but I can’t find it anywhere. In weekly training on franchise you get xp for gold silver and bronze which is obvious what you do with that, however you also get coins, what are these used for!?

Are you talking about XP (which in some places within M24 Franchise mode has a circular coin-looking icon)? Each player on your roster and throughout the league accumulates XP as a result of training, on-field stats and events, and completing scenarios. Earning enough XP rewards a player a Skill Points, which may be spent to increase that player's ratings.
There is no concept of "coins" in Madden franchise mode.
